I am planning a "big fancy dinner".

Basically, my boyfriend is taking an extremely huge exam tomorrow (CCIE Lab, if anyone is familiar with networking certifications) that costs more than $1,000 to take and requires flying to North Carolina and spending 10 hours at a testing site. If he passes (something like an 80% failure rate for this particular test) it will advance his career extremely well. He has been studying, very hard, for over a year. Basically, big freakin' deal goes on now.

So when he gets back, time for a big fancy dinner. Either to celebrate (::keeps fingers crossed::) or to show him that I still love him and I wish him better luck when he takes it again. So I need help on the menu. I want fancy stuff, not everyday foods, but I need it to be reasonably affordable. I can't spend $500 on ingredients for a meal for 2 people. The only meats that I can use are seafood and chicken. I was thinking maybe a soup or an appetizer or both, and a main course, and dessert. I'm pretty in the dark as to what to make, though. So....any thoughts?

french onion soup is easy and cheap, but looks oh so fancy! maybe you can start out with that

What is your price range? I have a bunch of pretty "fancy" menus I can share with you, but I don't want to give you a menu that would be 200 dollars if you're looking to spend 50. Let me know and I'll do some digging in my notebooks =)
